Black Pudding and Blue Cheese Sausage Rolls

This is one of our favourite recipes. These sausage rolls are easy to make and perfect for sharing, we always make them for friends and family – be warned they’ll be devoured in minutes and everyone will be back for seconds!



  • 500g of our cracked black pepper sausage meat
  • 200g of crumbled black pudding
  • sprig of parsley chopped
  • sprig of sage chopped
  • 1/2 tsp of mace
  • 1/2 tsp of cayenne pepper
  • 1 tbsp of english mustard powder
  • A good helping of crumbled blue cheese
  • puff pastry – I use pre-rolled for ease, normally 2 sheets but it depends how big you like your sausage rolls!
  • 1 egg beaten to brush on the pastry



  1. Preheat the oven to 190c
  2. Mix the sausage meat, black pudding, herbs and spices together then season
  3. Add the blue cheese and gently mix it in at the end so you’re left with some good chunks
  4. ¬†Divide your mix in two and place it down the centre the sheets of pastry. Fold in the pastry sheets so you’re left with two long rolls, then turn over
  5. Take some scissors and snip along the top, or slash using a knife – this will let out the steam as they cook
  6. Brush with the beaten egg
  7. Cut the big sausage rolls into even sized small sausage rolls
  8. Place them on a tray and bake in the over for roughly 30 minutes – or until golden brown
  9. Enjoy!
